El multiculturalismo culinario en España
De la asimilación a la diversidad
abstract
This article deals with the topic of food multiculturalism in Spain, a fairly new phenomenon in the country. It will analyse the representation of the immigrant gastronomic culture in official discourse and cultural texts. Due to the central position that food occupies today in relation to personal and political identity, the discourses that revolve around it offer a perspective on intercultural relations. This paper argues for the existence in Spain of a tension between a homogenizing model of food multiculturalism and a paradigm that emphasizes the protagonism of immigrants. However, this analysis seems to indicate that the future of multicultural cuisine in Spain will highlight much more the diversity of cuisines and the prominence of its producers.
